spiced potatoes, peas, and herbs, then deep-fried until golden brown. It's often
served hot with mint or tamarind chutney and enjoyed as a popular street food or
tea-time treat across South Asia, with variations that include meat or sweet fillings.
Ingredients
2 cups all-purpose flour
3 tbsp oil or ghee
½ tsp salt
Water (as needed for dough)
3 medium potatoes (boiled and mashed)
½ cup green peas
1 green chili (finely chopped)
1 tsp cumin seeds
1 tsp garam masala
1 tsp coriander powder
½ tsp turmeric powder
½ tsp red chili powder
Salt to taste

Steps
Prepare the dough: Mix flour, salt, and oil. Add water gradually to form a firm dough. Cover and rest for 30 minutes.
Make the filling: Heat 1 tbsp oil in a pan, add cumin seeds, then green chili, peas, and mashed potatoes. Stir in all spices and salt, mix well, and cool.
Shape samosas: Divide dough into balls, roll each into an oval, cut in half, form a cone, and fill with the potato mixture. Seal edges with water.
Fry: Heat oil on medium flame and fry samosas until golden and crisp.
Serve: Drain excess oil and serve hot with mint or tamarind chutney.
